We will provide you with a cut sheet once your deposit is placed. With both the 1/2 and 1/4 beef you'll receive approximately 50% premium steaks, roasts, brisket, braising cuts, fajita strips, stew meat, and other cuts; the other 50% will be ground beef or burger patties. The cuts you receive will depend on your selections and the animal being processed.

Your total take-home weight may vary depending on your cut sheet selections, including whether you choose bone-in or boneless cuts, as well as whether you keep soup bones, organ meats (offal), and other optional items.

For planning purposes, customers may generally expect approximately:

- ¼ Beef: 90-105 lbs packaged beef
- ½ Beef: 150-190 lbs packaged beef

These figures are estimates only and are not guaranteed. Actual packaged weight will vary based on the animal, aging, trimming, bone-in versus boneless cuts, and cutting instructions.
